Soil: Limestone pebbles on blue clay. Plan de Dieu & Visan (Violès) villages nearby Avignon in Southern Rhône.


Harvest: Manual. Double sorting process (in the vineyard and on the sorting table in winery).


Winemaking: whole bunch fermentation in temperature regulated concrete tanks. Natural yeasts. Aged 10 months in concrete tanks.


Food: Rosemary and peppercorn spiced lamb chops, or a savory stew.
